Chef Durbach will host an unforgettable series of cooking classes at Cioffi Cucina on April 13th 4:30pm-7:30pm. This will transport you into the heart of Italian gastronomy. For those of you who were wondering, the April 6th class has sold out already so we added a second date.
This class will take you into the rich culinary heritage of Emilia-Romagna, highlighting its signature flavors and traditional dishes.
Class Highlights:
- Iconic Ingredients: Mortadella, Parmigiano Reggiano, and gnocco fritto
- Hands-On Experience: Crafting tortellini as a group, paired with a homemade butter and sage sauce
- Fresh Pasta Techniques: Demonstrations on making tagliatelle, rolling pasta, and preparing an authentic meat ragù
- Sweet Finish: Individual caramel budino cups to complete the meal

Chef Andrey Durbach’s journey in the culinary arts began humbly at just 16 years old, washing dishes for pocket money. Now, with over 40 years of experience, he’s one of Vancouver’s most celebrated chefs and restaurateurs. His illustrious career has taken him to renowned kitchens in London, Tokyo, New York, and Phnom Penh, as well as to some of Vancouver’s finest dining establishments.
Educated at UBC and the prestigious Culinary Institute of America, Chef Durbach is revered for his passion for traditional cuisine and his knack for reimagining time-honoured classics with a modern twist. As Chef/Patron of numerous French, Spanish, and Italian restaurants, he’s cultivated a deep appreciation for Europe’s regional foods and wines, embracing their rich cultural roots.
Durbach’s style is defined by technical mastery, authenticity, and a generous spirit, traits that resonate with anyone who has dined at his restaurants. A natural storyteller, he delights in sharing his vast knowledge of food, wine, and the restaurant industry, offering insights and tales from his decades-long career to anyone eager to learn.
Currently, Chef Durbach's obsessions include gelato, Piedmontese wine, mortadella, modernist architecture, and classic cars. As a restaurant consultant, he continues to inspire and innovate while exploring exciting opportunities in the gelato world.
