I’m sure you may have heard about 00 flour when talking about pizzas or pastas. Double Zero, or in Italian Doppio Zero, as it’s called, is the flour renowned in Italy for making the finest pizza dough. This finely milled flour has more of the millet and bran removed than regular flours so it lends itself well to making homemade pastas and pizza doughs. However, because this flour is so soft it is excellent to use when baking cakes, breakfast breads, muffins, cookies, pastries, and more. I find that it really makes a difference in my baking and is an indispensable staple in every baker’s pantry. Come pick some up in the deli department! Pictured here are Palle Di Neve or Italian Snowball cookies which is an incredibly simple cookie made with butter, 00 flour, ground hazelnuts.
