I will admit right off the bat that I do not know anything about pairing wine with cheese! Friends of ours from Italy who also are in the wine business brought us home some fresh Mozzarella di Bufala (Buffalo Mozzarella) from the hometown in Italy where we are from – Avellino. Avellino is a small town close to Salerno in the region of Campania. There are lots of Cioffis that live in this region. Campania is where they make the best Mozzarella di Bufala. This is a soft and fresh mozzarella made from the milk of Italian Water Buffalos. In our deli we bring in lots of this delicate fresh cheese from Italy. It goes great in a Caprese salad, on pizza, or just on its own. Our friends in the wine industry told us that in Campania they always drink Moscato with Mozzarella di Bufala. They were kind enough to bring us a beautiful bottle of Ca’ Montebello Moscato. They were right! The sparkly subtle sweetness was a great match for the creamy and delicate fresh mozzarella. It was a treat to sip and savour the wine along with the delicious fresh cheese. I hope you get a chance to do so as well. My goal is to learn more about wine pairings.
